Kombucha – Fermented Tea for your Health!

Probiotics are all the rage, both in popular culture and in the scientific communities. It’s really about exposing yourself to certain classes of microorganisms that can support healthy digestive tract function. Homebrewers get a steady dose of Saccharomyces cerevisiae,which has long been a great source of B-complex vitamins but does occasionally raise its own problems. Vinegar is another useful homemade product with a history of health-promoting uses.

Kombucha is the best of both worlds. The organisms that give us beer and vinegar live together in a symbiotic culture of yeast and bacteria known as a SCOBY. Add to this potent probiotic team the long-recognized health benefits of tea and it is no wonder that ‘booch is becoming so popular.
