Description

Briess Extra Special is a hybrid drum roasted specialty malt. With a complex flavor that includes aspects of both caramel and dry roasted malts, Briess Extra Special is very different from the similarly-colored Caramel 120L. It tastes of toasted marshmallow, mild coffee, and prunes, with a dry, woody character. It imparts deep copper hues, trending towards light brown with heavier use. It can be used in low percentages to add complex background flavors to lighter colored or lighter gravity beers. Used more heavily it will add color and toffee-like aroma. Briess Extra Special is an excellent choice for use in abbey styles, porters, or darker ales.

Good in high gravity beers like Doppelbock, and mid to dark belgian style ales. Adds complexity to Abbey and darker styles like dry Irish Stouts and Porters. Or use in lighter colored, lighter gravity beers for rich, complex flavor.
