This article is one in a series describing the seasonal yeasts put out by our liquid yeast manufacturers. This one is..
White Labs WLP037 North Yorkshire Ale Yeast
Formerly known as Yorkshire Square Ale Yeast (2015 release).
“This yeast produces a beer that is malty, but well-balanced. Expect flavors that are toasty with malt-driven esters. Highly flocculent and good choice for English pale ales, English brown ales, and mild ales.”
Only a few breweries still use the Yorkshire Square brewing method and these are Samuel Smith’s, Theakston, Cameron’s, Marston’s, and the Black Sheep Brewery, all located in the north of the UK.
Vital stats:
Attenuation – 68-72%
Flocculation – High
Optimum Ferment Temp. – 65-70°F
Alcohol Tolerance – Medium-High
This strain has been DISCONTINUED from the Platinum strain rotation. We are getting it for the 2016 Quarterly Brewing Challenge by special arrangement.
